Why add a side plate to the throttle pedal?

Because your right foot often works on partial contact, especially heel-and-toe where it pivots to reach the next pedal. With no lateral support it slides off the side of the pad and throttle application turns inconsistent, right when the car is at its most sensitive: on corner exit.

What does it change on load cell pedals?

On a P2000, modulation happens within grams: how stable your foot is directly drives how fine your throttle control can be. The plate creates a stop that keeps the foot square and makes the movement repeatable, particularly in fast transitions between braking and throttle.
