Is 25 Nm too much for home use?

It's the top of what sim racing practises, beyond the effort at the wheel of a GT3 without power steering. Two prerequisites: a genuinely rigid chassis, otherwise the structure absorbs what the motor produces, and the physical conditioning to match, because an hour at this level really works your forearms.

Does the R25 Ultra hold its torque over a long race?

Yes, that's exactly what active cooling is for. At high output an unventilated base gradually reduces torque to protect itself, usually late in a stint. The R25 Ultra's active system keeps performance constant, including in endurance.

What mounting and connectivity options does it offer?

Front, side or bottom mounting depending on your rig, which gives you full freedom on an extrusion chassis. For connectivity you get USB, CAN-FD and expansion ports to link the rest of the MOZA ecosystem. Standard quick releases are supported on the wheel side.
